Tower of Smoked Salmon and Potato R?sti
for 4 persons
Ingredients:
400g Smoked Scottish Salmon
100g Philadelphia Cheese
500g Potatoes
1 Egg
Frisee Salad for Garnish
Salt, Pepper, Horseradish, Marjoram
Preparation:
Grate the peeled potatoes (but not too thinly), and press them lightly to squeeze the excess water from them. Put the potato mass into a bowl and mix with 1 egg, some salt, pepper and marjoram. Shape into 12 round ‘rösties’ and fry in a little oil until crispy on both sides. Drain, and then place the fried rösties onto a napkin to remove any excess oil. Put some salad on the plate, and then place a rösti on top, with a layer of salmon and a layer of cream cheese. Do this 3 times to form a small tower. Garnish with chives and red onions. This is a great summer time dish, particularly suited to a light white wine.
